Montezuma Fire (from the halls of Montezuma)
By: Ruth Ferry, wife of Cpl Al Ferry, Usmc - 1/2 lb. lean ground beef
- 1 pkg. spaghetti sauce mix
- 1-1/2 T. chili powder ( double to get fire hotter)
- 1 8-oz. cans tomatoe sauce
- 1 doz. corn tortillas
- 1 4-1/2 oz. can ripe olives (1/2 c. chopped) optional
- 2 c. grated cheese
- 1/2 c. small whole ripe olives, optional
- 1/2 lb. bulk pork sausage
- 1/4 tsp. seasoned salt
- 1/4 tsp. whole cumin seed
- 3 cups of water
- 1 med. onion, chopped
Brown beef and sausage until crumbly. Add spaghetti sauce mix,seasoned slat, chili powder, cumin seed, tomato sauce and water. Mix thoroughly; bring to boil. Reduce heat; simmer 20 minutes. Mixture will be soupy. Place 1/2 cup meat mixture on botton of 2-1/2 or 3 quart casserole dish; cover sides and bottom of dish with 6 tortillas. Where tortillas overlap, place a little meat mixture. Place half of the remaining meat mixture on the tortillas. Sprinkle with half of the onion, half of the chopped olives and half of the cheese. Repeat layers, ending with cheese. garnish with whole olives. Bake at 350 degrees for 35 minutes. Makes 6 to 8 servings. |
