Favorite Recipe

Olive Crostini

  • 1 (6oz.) can black olives
  • 1 (5.75oz.) jar green olives
  • 3-4 cloves minced garlic
  • 1/4 c. grated Parmesan cheese
  • 3 T. butter
  • 3 T. olive oil
  • 1/2 c. shredded Monterey Jack cheese
  • 1/2 c. chopped fresh parsley (opt.)
  • 1 1/2 baguettes, thinly sliced

Preheat oven to broil. Coarsely chop olives in a food processor (mini chopper works great). Transfer olives to a medium bowl. To the food processor add garlic, Parmesan cheese, butter and olive oil and pulse until a paste forms. Add this mixture to the olives in the bowl and mix well. Fold in Monterey Jack cheese and parsley. Spread each slice of bread generously with olive mixture and place on a cookie sheet. Broil until bubbly and lightly browned. Serve warm. Delish!
