Description: Housed in the historic Yellowstone Hotel, the Park County Senior Center has a long history of bringing life to the people of Park County. Nearly 50 years ago, our founding members remodeled the upper floors of the building into living quarters for seniors. The transformation of the hotel into apartments relied on volunteer member labor and donated materials. That rich tradition of volunteerism continues today with the production of this cookbook, made possible by the hard work of committee members Sue Betz, Mary Ann Mack and Lee Parriott. This cookbook is dedicated to them, as well as to our founding members and contributors. Proceeds from the sales will support our mission to promote the physical, intellectual and social well-being of seniors. In the words of Jacques Pepin, “You can't escape the taste of the food you had as a child. In times of stress, what do you dream about? Your mother's clam chowder. It's security, comfort. It brings you home.” We hope you enjoy this cookbook and what it represents, a lifetime of delicious memories.

Our mission is accomplished by providing a safe and comfortable gathering place for seniors; by providing housing for senior citizens at the lowest possible cost; and by providing diverse social activities, educational opportunities and events that support physical, intellectual, and social welfare of seniors.

Pop's Antelope Meatloaf

  • 1 lb. ground antelope
  • 1 egg
  • 1/2 c. bread crumbs or oatmeal
  • 1/4 c. milk
  • 2 T. catsup
  • 1 to 2 T. dry onion soup mix
  • 2 T. Worcestershire sauce

Heat oven to 350 degrees. Mix all ingredients together and pack into 9 x 5 x 2 - inch bread pan, sprayed well with cooking spray. It will only fill the pan about half full, but it bakes better and doesn't take a long. Bake for 45 minutes. In Memory of Bill Parriott, Father-in-law
