Candied Sweet Potatoes

  • 3 large sweet potatoes
  • 2/3 cup Light Promise
  • 1/3 cup white sugar
  • 1/3 cup Brownulated sugar (pourable brown sugar)
  • 1 teaspoon cinnamon
  • 1/2 cup teaspoon freshly grated nutmeg
  • 1 teaspoon vanilla extract

Rinse and scrub sweet potatoes with a food brush under warm running water. Put them in a large pot filled with boiling water and simmer briskly for about 30 minutes, until the potatoes are tender but not soft. Drain the potatoes and let them cool. Spray a 13 x 9-inch (or larger) baking dish with cooking spray Peel the potatoes and slice them into thick (3/8" to 1/2") slices. Arrange in a single layer in prepared dish. preheat oven to 425 degrees. In a small saucepan, stir together Promise, sugars, cinnamon, and nutmeg. Stir and cook over medium heat until sugars have dissolved and mixture is slightly thickened.. Remove from heat and still in vanilla. Spoon mixture over potatoes. Bake in oven for 30 minutes, basting occasionally. Makes 6-8 servings
