Broccoli Burger

  • 1 head fresh broccoli
  • 1 small onion
  • 1 c. peppers (red and/or green)
  • 1 clove garlic (fresh)
  • 1 grated carrot (optional)
  • 3 eggs (optional)
  • 1/2 c. Malt-O-Meal
  • 1/4 c. water or evaporated milk
  • 1/4 to 1 c. oil
  • 1/3 tsp. cayenne pepper
  • 1/2 tsp. sea salt
  • whole wheat burger buns
  • lettuce
  • tomato
  • onion
  • mustard and ketchup

Chop broccoli and part of stalk, onions and peppers in a large bowl. Mince garlic and add to mix. Add grated carrots. Mix in eggs and Malt-o-meal. No water needed if you use eggs. Mix in salt and pepper. Form into patties. Heat oil (1 cup) and fry burger. Do not precook any of the vegetables. if you do not want to fry you can bake it. Just add 1/4 cup oil to total mix. Oil your pan (cookie sheet); form the burger and bake at 350° for 25 to 30 minutes. Serve with soup and salad.
