Southwestern Corn Chowder

  • 2 medium potatoes, boiled and diced
  • 3 T. butter
  • 1 T. garlic, chopped
  • 1 red pepper, diced
  • 1 medium onion, diced
  • 3 T. flour
  • 16 oz. picante sauce
  • 1 can vegetable broth
  • 2 cans cream corn
  • 1 can corn niblets
  • 8 oz. salsa con queso
  • 1 pint half and half
  • shredded cheddar cheese
  • sliced green onions

Boil and dice potatoes and set aside. In a large pan, melt butter. Saute garlic, pepper and onion until soft. Add flour and cook 2 minutes on medium heat. Add picante sauce, broth, cream corn and simmer for 5 minutes. Add potatoes and corn niblets. Add salsa con queso and half and half. Heat thoroughly. Ladle into bowls. Garnish with green onions and cheese.
