Millionaire Stuffed Shrimp
By: Joyce Mclaughlin - 2 doz. jumbo shrimp
- 1 medium onion, finely chopped
- 1/2 medium green pepper, finely diced
- 1/2 cup celery, finely chopped
- 1/2 cup butter, melted and divided
- 1 lb. lump crabmeat (or imitation)
- 1 large egg, beaten
- 3/4 cup cracker crumbs
- 1/2 cup mayonnaise
- 1 Tbsp mustard
- 2 tsp. Worcestershire sauce
- 1/8 tsp. ground red pepper
- Paprika
Peel shrimp, leaving tails intact; using paring knife, cut slit almost through back of shrimp. Open shrimp to flatten and place on sheet pan sprayed with oil spray; set aside. In skillet, cook onion, green pepper, celery, and 1/4 cup butter. Stir often and cook until soft. Combine crabmeat, egg, cracker crumbs, mayonnaise, mustard, Worcestershire sauce, and red pepper in a bowl; stir gently. Add cooked vegetable mixture; mix well. Top each shrimp with approximately 3 Tbsp crabmeat filling. Sprinkle with paprika and drizzle remaining 1/4 cup butter over top of stuffed shrimp. Bake uncovered at 350 degrees for about 30 minutes or until shrimp are cooked through. Place under broiler for about 5 minutes until tops are browned, basting with pan juices while broiling. Serve with lemon wedges. |
