Port Republic Volunteer Fire Company Clam Chowder

  • 65 chowder clams, opened,chopped, reserve juice
  • 1 lb. onion, chopped
  • 1 bunch celery, chopped
  • 8 1/2 lbs. chopped potatoes
  • 1 1/2 lbs. carrots, chopped
  • 1/3 lb. salt pork, ground
  • 1 28 oz. can tomato puree and 2 28 oz can crush tomatoes
  • 1/2 lb. barley
  • 1/2 oz. jar pot herbs

Saute pork until brown. Add chopped vegetables, herbs, barley and add water to cover. Cook until tender and add tomatoes; simmer 1/2 hour. Add clams, juice and additional water as needed. Turn off heat and let cool. do not put a lid on chowder as it will spoil the soup. Freezes well.
