Bourbon Pecans
By: Frank Karpiel

  • 1/4 c. granulated sugar
  • 1/4 c. brown sugar
  • 1 T. cinnamon
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 3 T. bourbon
  • 1 T. honey
  • 1 T. vanilla
  • 1 egg white
  • 1 lb. pecan halves

In one bowl, combine the sugars, cinnamon, salt and nutmeg; set aside. In another larger bowl, combine bourbon, honey and vanilla. Add egg white and whisk until frothy; add pecans. Remove pecans from the bourbon mixture; leave any extra liquid behind. Add to the dry ingredients and stir to coat. Place pecans on a parchment or silipat lined cookie sheet and bake at 250 degrees for 1 1/4 hours. Stir every 20 minutes with a wooden spoon or spatula. The pecans might clump together--use 2 forks to separate before baking. Cool completely. The pecans will keep for up to a month in a tin or tightly closed container.
