Typical Salvadorian Breakfast

  • 1 pkg. Mexican chorizo
  • 1 can refried beans (red or black)
  • 2-3 plantains (depending on size)
  • 4 eggs
  • corn tostadas
  • vegetable oil
  • Salvadorian sour cream (or queso duro is that is your preference)

Cut plantains in half or thirds; slice along the length in 1/4-inch slices. In a small frying pan, heat vegetable oil on medium to low heat (enough to cover half of the slices when laid out in a single layer in the frying pan.) Simmer in medium to low heat until golden brown; set aside. In 1-qt. pan, heat up refried beans. In a small frying pan, put half of the Mexican chorizo to cook, make sure to break it up and make it into an even layer. Cook until all fat is melted and meat is dark red. Add eggs and scramble until eggs are cooked. Serve at breakfast with corn tostadas and sour cream (or queso). Makes 2-3 servings.
