Description: The people of Prospect, and Robeson County have a special gift for cooking. In recent years, many of our older folks have heard from our young people that unless someone wrote down these recipes, they would be lost. So we have done that here, gathering them from some of the best cooks around so that they can be passed down to the next generation of great cooks. And that is how yesterday got into tomorrow.

- 1 head of collards, shredded
- 6 tbs frying grease (already used to fry meat or chicken)
- Salt and Pepper to taste
Clean collards, pop off end of stem and shred (to shred, take about 5 collard leaves and roll together, using a knife, start at top of leave and cut to size desired.) heat oil in pot until hot, add collards. Stir often. Cook for a few minutes and add salt and pepper to taste. Cook until tender, approx. 20 mins.
