Favorite Recipe

Orange Apricot Salad

  • 2 c. boiling water
  • 2 pkg. orange or apricot Jell-O
  • 1 c. pineapple juice
  • 1 c. crushed pineapple
  • 1 can apricots (save juice)
  • 1/2 c. miniature marshmallows
  • Topping:
  • 1 c. apricot juice
  • 1/2 c. sugar
  • 2 tbsp. flour
  • 2 tbsp. butter
  • 1 egg, beaten
  • 1 c. Cool Whip, thawed
  • 1 c. shredded Cheddar cheese

Dissolve Jell-o in boiling water. Mash apricots. Mix apricots, pineapple, pineapple juice, and marshmallows and add to cooled Jell-o. Pour into a 9x12" pan. Chill until firm. Topping: In saucepan, mix apricot juice, sugar, flour, butter, and beaten egg. Cook over low heat, stirring well, until thick. Cool. Fold 1 c. Cool Whip into cooled topping. Spread over chilled salad. Top with shredded Cheddar.
