Marshmallow Sweet Potatoes

  • 3 lg. sweet potatoes or 29 oz. can of sweet potatoes
  • 1 egg
  • 1/3 c. sugar
  • 1/2 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 2 c. mini marshmallows
     
 
Cook fresh potatoes until tender, or use canned sweet potato. Combine potatoes, egg, sugar, cinnamon, and vanilla and mix with electric mixer on medium speed for 2-3 minutes. Put mixture into a 2 quart ungreased baking dish. Bake uncovered at 350° for 25 minutes. Top with marshmallows and bake for an additional 5 minutes.
