Cherry Almond Mousse Pie

  • 14 oz. sweetened condensed milk
  • 1 oz. unsweetened chocolate
  • 1/2 tsp. almond extract
  • 9 in. pastry shell, baked
  • 10 oz. maraschino cherries, drained
  • 8 oz. cream cheese, softened
  • 1 c. cold water
  • 1 pkg. instant vanilla pudding mix
  • 1 c. whipping cream, whipped
  • 1/2 c. toasted sliced almonds
     
 
Over low heat, stir 1/2 cup milk and chocolate for 4-5 minutes or until mixture is thickened. Add 1/4 tsp. extract. Pour into shell. Set aside. Reserve 8 whole cherries for garnish. Chop remaining cherries and set aside. In mixing bowl, beat cream cheese until light. Gradually beat in water and remaining milk. Add pudding mix and remaining extract. Mix well. Fold in whipped cream. Stir in chopped cherries and almonds. Pour into shell. Chill for 4 hours. Garnish with whole cherries.
