Cucumber Pickles

  • 2 c. lime
  • 2 gal. cold water
  • 8 lb. cucumbers, sliced
  • 10 c. sugar
  • 2 qt. vinegar
  • 2 T. salt
  • 3/4 oz. pickling spices
     
 
Soak cucumbers in lime water for 24 hours. Drain and wash cucumbers in water 4 or 5 times. Mix sugar, vinegar, salt, and spices. Pour over cucumbers and let stand for 3 hours before heating. Remove cucumbers and bring vinegar solution to a boil. Boil for 5 minutes. Add cucumbers back in vinegar solution and bring to boil. Reduce heat and simmer for 30 minutes. Pack cucumbers in hot jars and seal.
