Pumpkin Or Sweet Potato Pies With Coconut

  • 4 eggs, beaten
  • 1 c. sugar
  • 1 tsp. vanilla flavoring
  • 4 c. cooked pumpkin or sweet potatoes
  • 1 c. coconut
  • 1 stick butter, melted
  • 1 c. milk
  • 2 deep unbaked pie crusts
     
 
Pre-heat oven to 350°. In a large bowl, mix together the eggs, sugar, vanilla flavoring, milk, coconut, melted butter and approximately 1 cup of milk (adjusting amount if necessary). Pour into TWO deep unbaked pie crusts. Bake at 350° for 30 to 45 minutes.
