Pumpkin Or Sweet Potato Pies With Coconut

- 4 eggs, beaten
- 1 c. sugar
- 1 tsp. vanilla flavoring
- 4 c. cooked pumpkin or sweet potatoes
- 1 c. coconut
- 1 stick butter, melted
- 1 c. milk
- 2 deep unbaked pie crusts

| Pre-heat oven to 350°. In a large bowl, mix together the eggs, sugar, vanilla flavoring, milk, coconut, melted butter and approximately 1 cup of milk (adjusting amount if necessary). Pour into TWO deep unbaked pie crusts. Bake at 350° for 30 to 45 minutes. |
