Pumpkin Nut Muffins

  • 2 c flour
  • 1 tsp soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 2 eggs
  • 1/3 c buttermilk
  • 1/3 c melted butter
  • 1 tbs molasses
  • 1/2 tsp vanilla
  • 1 c sugar
  • 1 c canned pumpkin
  • 1/2 c chopped pecans (optional)
     
 
Preheat oven to 350. Grease or line 24 muffin cups. Sift together flour, soda, powder, cinnamon, nutmeg and ginger. In separate bowl, beat eggs. Add milk, butter, molasses, vanilla, sugar and pumpkin. Stir in dry ingredients, just until moistened. Fold in nuts. Spoon into muffin cups. Bake for 20-25 minutes. Serve warm.
