In a small bowl, mix sugar and salt together. Coat pork with sugar mixture. Let stand 1 hour at room temperature. Make marinade by mixing soy sauce, sherry and a couple drops of food coloring. Coat pork strips on all sides. Cover and let stand in refrigerator overnight, turning once or twice. Preheat oven to 500°. Place pork on wire rack on foil-lined pan. Bake in preheated oven for 13 minutes. Reduce heat to 350° for about 15 to 20 minutes depending on the thickness of the pork. Cool and slice. Serves 4 to 8.
