Blue Ribbon Chocolate Chip Cookies

  • 2/3 c. shortening
  • 2/3 c. margarine (softened)
  • 1 c. sugar
  • 1 c. brown sugar (packed)
  • 2 eggs
  • 2 tsp. vanilla
  • 3 c. self-rising flour
  • 12 oz. chocolate chips
  • 4 to 6 oz. coconut (opt.)
     
 
Heat oven to 375°. Mix thoroughly shortening, margarine, sugars, eggs and vanilla. Stir in flour and chocolate chips. (For a softer, rounder, cookie, add additional 1/2 cup flour). Drop dough by rounded teaspoons 2-inches apart onto ungreased baking sheet. Bake 8 to 10 minutes or until light brown. Cool slightly before removing from baking sheet. Yields about 7 dozen cookies. (Optional:) Pour all cookie dough on large cookie sheet and bake 15 to 20 minutes or until browned. Cut into squares.
