Chinese Salad

  • 1 medium head nappa cabbage [sliced thin or diced]
  • 2 whole green onions [tops included] diced
  • 1 stick margarine
  • 1/4 bottle sesame seeds
  • 1 small pkg sliced almonds
  • 2 pkgs. Ramen noodles [discard seasoning]
  • 1/4 cup vinegar
  • 3/4 cup oil
  • 1/2 cup sugar
  • 2 T. soy sauce
     
 
Mix cabbage and onions together, cover and refrigerate. In large skillet, melt margarine and add sesame seeds, almonds and ramen noodles. Crunch up noodles while still in package. Brown this whole mixture till light brown. [This takes several minutes] Stir constantly so they don't burn. Let cool and put in bowl and cover. In saucepan add vinegar, oil, sugar and soy sauce. Bring to boil for 1 minute. Cool in refrigerator till ready to make salad. Mix together just before serving. Noodle mixture can be chilled but should be shaken real good to separate.
