African Vegetable Stew

  • 1/2 lb. parsnips or kohlrabies
  • 1 lg. yellow onion
  • 1 med. sweet potato
  • 2 med. zucchini squash
  • 1 15 oz. can diced tomatoes with liquid
  • 1 15 oz. can chickpeas with liquid
  • 1/4 c. seedless raisins
  • 1 tsp. coriander
  • 1/2 tsp. turmeric
  • 1/2 tsp. ginger
  • 1/2 tsp. cumin
  • 1/2 tsp. cinnamon
  • 4 c. water
     
 
Peel and coarsely chop parsnips, onion, sweet potato, zucchini, tomatoes, chickpeas and raisins. Combine all ingredients in a large pot. Bring to boil and lower heat to a simmer. Cook covered for about an hour, or until desired consistency.
