Apple Pudding
|
- 2 eggs, extra large or jumbo, beaten
- 1 C. sugar
- 1/4 tsp. ground cloves
- 1 C. flour
- 1/2 c. walnuts
- 3 C. gala or Fuji apples, grated
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 4 T. sweet butter, melted
- 1/2 C. raisins

| Beat eggs until light; add sugar, cloves, and flour. Add butter, grated apples, nuts, and raisins. Spread mixture about 1 1/2 inches thick in buttered 8x12 inch pan. Bake 40 minutes in a preheated 375° oven. In a chilled bowl with chilled beaters, beat whipping cream until stiff. Add confectioner's sugar, rum and vanilla flavorings. Put a large tablespoon on top of each piece of pudding. |
