Apple Pudding

  • 2 eggs, extra large or jumbo, beaten
  • 1 C. sugar
  • 1/4 tsp. ground cloves
  • 1 C. flour
  • 1/2 c. walnuts
  • 3 C. gala or Fuji apples, grated
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 4 T. sweet butter, melted
  • 1/2 C. raisins
     
 
Beat eggs until light; add sugar, cloves, and flour. Add butter, grated apples, nuts, and raisins. Spread mixture about 1 1/2 inches thick in buttered 8x12 inch pan. Bake 40 minutes in a preheated 375° oven. In a chilled bowl with chilled beaters, beat whipping cream until stiff. Add confectioner's sugar, rum and vanilla flavorings. Put a large tablespoon on top of each piece of pudding.
