Golden Wassail

  • 1 qt. unsweetened pineapple juice
  • 1 qt. apple cider
  • 2 2 in. cinnamon sticks
  • 1/4 tsp. salt
  • 1 15 oz. can apricot nectar and 1 cup orange juice
  • 1 tsp. whole cloves
  • 1/4 tsp ground cardamon
  • Garnish: cinnamon sticks
     
 
Combine pineapple juice, apricot nectar, apple cider, orange juice, cinnamon sticks, cloves, salt and cardamon in a large Dutch oven; bring to a boil over medium high heat, stirring occasionally. Reduce heat and simmer for 15 minutes. Remove cinnamon and cloves; garnish if desired. Serve immediately. Yield: 9 cups.
