Vegetable Latkes
|
- 2 c. zucchini, unpeeled
- 2 c. sweet potatoes, peeled
- 1/2 c. finely chopped parsley
- 1/2 c. onion, finely chopped
- 1/3 c. matzoh meal
- 2 T. matzoh cake meal
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 eggs, beaten
- 4 T. oil

| Grate zucchini and sweet potatoes on the large side of the grater. Combine zucchini, sweet potatoes, onion and parsley in a large bowl. Add seasoning, matzoh meal, cake meal and eggs. Mix well and drop by large spoonfuls onto preheated skillet which contains 4 tablespoons of hot oi. Fry until browned, turning once. |
