Vegetable Latkes

  • 2 c. zucchini, unpeeled
  • 2 c. sweet potatoes, peeled
  • 1/2 c. finely chopped parsley
  • 1/2 c. onion, finely chopped
  • 1/3 c. matzoh meal
  • 2 T. matzoh cake meal
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 eggs, beaten
  • 4 T. oil
     
 
Grate zucchini and sweet potatoes on the large side of the grater. Combine zucchini, sweet potatoes, onion and parsley in a large bowl. Add seasoning, matzoh meal, cake meal and eggs. Mix well and drop by large spoonfuls onto preheated skillet which contains 4 tablespoons of hot oi. Fry until browned, turning once.
