carrot Fluff (kugel)

  • 1 c. cake meal
  • 1 tsp. salt
  • 3 lbs. carrots, cooked and mashed
  • 3/4 c. sugar
  • 1 stick, unsalted pareve margarine, melted
  • 3 eggs, separated
Combine cake meal and salt. In a large bowl combine mashed carrots, sugar, melted margarine and egg yolks. Mix well. Make a well in the center of mixture and pour dry ingredients into it. Stir until well blended. Beat egg whites until stiff but not dry. Gently fold into carrot mixture. Lightly spoon into greased baking dish. Bake at 375º. Bake for 35 minutes until puffed and set.
