Broccoli Slaw

  • 1 pkg. of broccoli slaw (found in produce section)
  • 1 bunch scallions
  • 1/2 c. sunflower seeds
  • 1/2 c. slivered almonds toasted (put on cookie sheet)
  • 2 pkg. Roman Noodles, Oriental flavor uncooked
  • 1/2 c. apple cider vinegar
  • 1/2 c. oil
  • 1/2 c. sugar
  •      
     
    Mix slaw, sunflower seeds and almonds. Break up noodles and toss into mixture. Keep oriental seasoning packets separate. (You will need them for the dressing). Mix sugar, oil and vinegar and flavor packet from noodles until dissolved. Pour over slaw mixture. The longer the slaw sits in the dressing, the softer the noodles will get and the more flavorful the slaw. The salad can be mixed the day before, or just a few hours prior to serving. Mix well before serving.
    I break up the noodles using a rolling pin, and it seems to work great and fast.
