Ana's Mediterranean Chicken

  • 12 boneless, skinless chicken breasts & thighs
  • 6 cloves minced garlic
  • 1/4 c. oregano
  • 1/4 c. parsley
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. red wine vinegar
  • 1 c. olive oil
  • 1 c. pitted prunes
  • sm. jar capers
     
 
Arrange washed chicken in single layer. Mix everything else together but be sure to drain olives very well and drain capers even better (paper towels) to avoid bitterness. Spoon mixture evenly over chicken distributing olives and prunes well. Refrigerate overnight. Bake at 350 degrees for 60 minutes. Uncover halfway through cooking. Serve over couscous or rice.
