No Crust Pumpkin Pie

  • 2 cups pumpkin
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1/2 cup white sugar
  • 1/2 cup bisquick
  • 2 eggs
     
 
Place pumpkin, brown sugar, vanilla, cinnamon, sugar, bisquick, and eggs in the large bowl of an electric mixer. Beat to combine. Pour into a 9-inch pie pan that has been sprayed with a non-stick vegetable spray. Bake in 350 degree oven. 35-40 minutes or until a knife inserted near the center comes out clean. Makes 8 servings.
