3 granny smith apples, peeled, cored and cut into thin slices
1/4 tsp. cinnamon
1 T. granulated sugar
1 c. milk
3 lg. eggs, at room temperature
3/4 c. all-purpose flour
2 T. granulated sugar
Preheat oven to 400°. In a medium-size ovenproof skillet, melt the butter. Add to the butter apples, cinnamon and sugar. Saute apples until slightly soft and then remove from the heat. Whisk together the milk, eggs, flour and sugar. Pour egg mixture over the apples and immediately place the skillet in the oven. Bake for 30 to 35 minutes or until the top has lightly browned. Remove from oven and let set. Pancake will sink a little. Sprinkle confectioners' sugar on top of pancake and garnish with your favorite vanilla ice cream.
