Sticky Date Pudding With Butterscotch Sauce

  • 1 1/4 c. seeded dates
  • 1 1/4 c. boiling water
  • 1 tsp. baking soda
  • 2 oz. butter
  • 3/4 c. brown sugar
  • 2 eggs
  • 1 c. self-rising flour
     
 
Grease 8 inch round cake pan, line bottom with baking paper. Combine dates and water in pan, bring to a boil, then immediately remove from heat. Stir in baking soda. Let stand 5 minutes. Blend date mix with butter and sugar until almost smooth, add eggs and flour till just combined. Pour in pan. Bake at 350° for 55 minutes. Cool 10 minutes and remove from pan.
