Split Pea Soup

  • 1 sm. onion, diced
  • 1 tbsp vegetable oil
  • 4 c. water
  • 1 cn. chicken broth
  • 1 1/2 c. dry split peas, rinsed
  • 1 c. fully cooked ham
  • 3 bay leaves
  • 1 1/2 tsp salt
  • 1/4 tsp dried rosemary, crushed
  • 1/4 tsp dried thyme
  • 1/4 tsp pepper
     
 
In a large saucepan, saute onion in oil until tender. Add remaining ingredients. Bring to a boil; reduce heat. Cover and simmer for one hour or until peas are tender. Discard bay leaves.
