Fill the bottom half of the pot with water up to the bottom of the screw. Fill the top half loosely with coffee (do not pat down). Place the pot over medium heat. As the water heats, the pressure will push the water up into the top half. Place the sugar in a 2-cup glass measuring cup. When the coffee begins to rise to the upper half of the pot, take 2 teaspoons and add it to sugar. With a spoon, whip the sugar and coffee into a smooth, beige paste. When coffee is fully brewed, pour into measuring cup and stir until sugar is fully absorbed. Pour into demitasse cups and serve.
