Lady Fingers

  • 2 sticks margarine (softened)
  • 3 T. ice cold water
  • 1 tsp. vanilla
  • 3 c. plain flour
  • 1/2 tsp. salt
  • 1 1/2 c. finely chopped pecans
     
 
Using a mixer, cream margarine and sugar. Add water and vanilla, mix again. Add flour and salt, then mix. Stir in nuts by hand. Store in a tightly covered container in refrigerator for several hours. Roll into finger shapes. Preheat oven to 325°. Bake approximately 30 minutes. Let cookies cool and pour confectioners sugar over. Gently shake, so cookies are coated with sugar.
