Wassail

  • 6 c. apple cider
  • 1 cinnamon stick
  • 1/4 tsp. nutmeg
  • 1/4 c. honey
  • 3 T. lemon juice
  • 1 tsp. grated lemon peel
  • 1 can (18 ounces) unsweetened pineapple juice
  • 1 whole orange
  • whole cloves
  • extra cinnamon sticks
     
 
In a large saucepan, heat cider and one cinnamon stick to boiling. Reduce heat, cover, and simmer for 5 minutes. Uncover and stir in remaining ingredients - EXCEPT the orange, whole cloves, and extra cinnamon sticks. Simmer for 5 minutes longer. Cut the orange into 1/4 inch slices. ;INSERT 5 whole cloves, at equal intervals, in the edge of each slice. Cut out a wedge of peel and pulp between each clove so that the orange slice looks like a star. Serve the drink in a punch bowl and float the "orange stars" on top, in the bowl. Use the extra cinnamon sticks as stirrers for the drinks. This recipe makes 16 servings, 1/2 cup each.
