Pumpkin Cake

  • Cake:
  • 1 yellow cake mix (dry)
  • 1 16 oz. can solid pack pumpkin
  • 3/4 c. sugar
  • 1/2 c. oil
  • 1/4 c. water
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 4 eggs, beaten
  • Frosting:
  • 1 pkg. cream cheese
  • 1 lb. powder sugar
  • 1/2 tsp. vanilla
      
 
Cake:Beat cake mix, pumpkin, sugar, oil, water, cinnamon, nutmeg and eggs together on medium speed. Bake at 350° for 45-50 minutes until toothpick comes out clean. Frosting:Mix cream cheese, powdered sugar and vanilla with a mixer. If you want a stiffer icing add more powdered sugar.
